I am always on a quest to find new recipes. It is hard to find a good recipe online. I tend to get my recipes from friends. I was working on my meal plan on Sunday and stumbled across this recipe in a Facebook group I am in. Someone posted this recipe, and it looked easy to make and it was healthy too. I noticed it was from http://www.skinnytaste.com. I printed off the recipe and bought the ingredients. I wanted to give it a try. I also liked the idea of making my own taco seasoning so I can control the salt and sugar. It was out of my comfort zone to make my own since I always buy Taco Seasoning packets for taco night.

I did follow the recipe with the following modifications for this recipe. First, I omitted the onion. My family is not a fan of onions so I just sprinkled onion powder on top. Second, I couldn’t find a 4 ounce can of chopped green chili peppers. So I omitted it. Third, I also omitted the cilantro and the taco seasoning packet. I ended up making the taco seasoning from scratch per the recipe. Fourth, I drained the black beans and added them. I wasn’t sure whether to drain them or not.
You can have this plain, over rice, in a tortilla, with tortilla chips, etc. I know the next time I make it I may add chicken broth to give it more depth and to use it to spoon over rice.

Crock Pot Chicken Taco Chili

- 1 small onion, chopped
- 1 (15.5 oz) can black beans
- 1 (15.5 oz) can kidney beans
- 1 (8 oz) can tomato sauce
- 10 oz package frozen corn kernels
- 2 (10 oz) cans diced tomatoes w/chilies
- 4 oz can chopped green chili peppers, chopped
- 1 packet reduced sodium taco seasoning or homemade (see below)
- 1 tbsp cumin
- 1 tbsp chili powder
- 24 oz (3-4) boneless skinless chicken breasts
- 1/4 cup chopped fresh cilantro
To make your own taco seasoning, omit the packet, cumin and chili powder above and use below instead:
- 1 1/2 tablespoons cumin
- 1 1/2 tablespoons chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Combine beans, onion, chili peppers, corn, tomato sauce, diced tomato, cumin, chili powder and taco seasoning in a slow cooker and mix well. Nestle the chicken in to completely cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro and your favorite toppings!
